Hope all is well I hope everybody is doing well and your training is in full tilt.. Ready for a HUGE season… NOT. Well anyway I have fallen behind and getting you guys some good grub from our nutritionist over at Santa Barbara Boot Camp for all you checking out this killer blog. I have about 15 women in camp right now in week 2 and they all love it. So I hope you love mushrooms… here is a great recipe for ya to try…
Grilled Portobello"s
Avocado Salsa
4 large Portobello mushrooms
3 tbs. balsamic vinegar
2 tbs. red wine vinegar
2 tbs. olive oil
1/4 tsp. crushed red pepper
1 medium avocado, seeded, peeled, and chopped
6 cherry tomatoes, quartered
4 green onions, sliced
1/4 C. crumbled, crisp cooked bacon (about 4 slices)
2 tbs. snipped fresh cilantro
Cut off mushroom stems retain only the caps.In a small bowl combine balsamic vinegar, red wine .vinegar, olive oil and crushed red pepper. Stir well, then reserve about 1/4 C of mixture for the salsa.
Brush mushrooms with vinegar mixture and grill - either on a grill pan or on the bar-b-que. Grill for about 8 to 10 minutes or until tender, turning occasionally and brushing with additional vinegar mixture.
For salsa, in a medium bowl combine the reserved vinegar mixture with the avocado, cherry tomatoes, green onions bacon and cilantro.Spoon the salsa over the finished mushrooms and serve.
